Peanut butter cookies

This is one of my very favourite recipes from childhood: it’s easy to make, super quick, and the pre-cooked cookie mixture tastes even better than cake mix (yes yes, I know there’s raw eggs, but it tastes far too good to care).

With a pretty high sugar content, they’re not the healthiest of snacks; but whoever baked cookies to be healthy?

Ingredients

  • 4oz crunchy peanut butter
  • 5oz soft margarine
  • 4oz granulated sugar
  • 4oz soft brown sugar
  • 5oz self-raising flour
  • 1 egg, beaten
  • ½ tsp vanilla extract

 Make the magic happen

  1. Preheat oven to 180C, grease and line a baking tray
  2. Using an electric hand whisk, cream together your peanut butter, sugar and margarine

    On to a winner…

  3. When light and fluffy, add your beaten egg and vanilla essence and continue to whisk
  4. Once sufficiently combined, sift in your flour and fold gently until all trace of flour has disappeared
  5. Spoon the mixture into walnut size pieces on your greased and lined baking tray (being sure to leave plenty of space around each one to expand) and pat down using a floured fork

    Messy, but oh so tasty!

  6. Bake in a preheated oven for 10-12 minutes, then remove from the oven and leave to cool before devouring (if you manage this, you’re a better person than me. I always get impatient and burn my tongue)
